  • 1¾ cups prepared apple butter
  • 1 cup heavy cream
  • 3 large eggs
  • ½ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon grated nutmeg
  • ¼ teaspoon coarse kosher salt
  • Pinch ground cloves

Instructions

  1. Prepare the Crust: Roll out the spelt pie crust and fit it into a 9-inch pie plate. Chill in the freezer for 15 minutes.
  2. Blind Bake: Preheat oven to 375ºF. Line the crust with parchment paper and add weights; bake for 20 minutes, remove weights, and bake another 5 minutes until golden.
  3. Mix Filling: In a bowl, whisk together apple butter, heavy cream, eggs, brown sugar, cinnamon, nutmeg, salt, and cloves until smooth.
  4. Bake: Pour filling into crust and bake on the middle rack for 45-55 minutes until edges are puffed and center wobbles slightly.
  5. Cool: Transfer to a wire rack to cool before refrigerating for at least six hours.
