  • 150 g granulated sugar
  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole / skimmed / lactose-free or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 180°C (350°F). Peel and slice the apples, then toss them with sugar, salt, and cornstarch in a bowl. Let them sit for about 15 minutes.
  2. Spread the apple mixture in a baking dish and bake for 40-50 minutes until tender but still holding their shape.
  3. In a saucepan, heat the milk, sugar, and salt until hot. Whisk egg yolks and cornstarch together in a separate bowl. Gradually combine with hot milk while whisking.
  4. Return the mixture to the heat and cook until thickened. Stir in vanilla bean paste.
  5. Layer baked apples and custard in serving dishes. Chill for at least an hour before serving.
