  • 12 thick-cut slices of brioche bread
  • 1 3/4 lb apples, peeled and diced
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 3/4 cup brown sugar
  • 1 cup milk
  • 1 cup heavy cream
  • 4 eggs
  • Optional: turbinado sugar for topping

Instructions

  1. Preheat the oven to 350F. Grease a baking pan with cooking spray and line with parchment paper.
  2. In a saucepan over medium heat, melt butter; stir in flour and brown sugar. Add diced apples and water, cover, and cook until soft (10-15 minutes). Strain juices for later use.
  3. In another saucepan, combine milk, cream, sugar, salt, and spices; whisk until blended over medium-low heat. Gradually whisk in eggs.
  4. Cut brioche into cubes; layer one-third in the pan followed by one-third of the apple filling. Repeat layers ending with bread on top.
  5. Pour custard over layers ensuring all bread is soaked; sprinkle turbinado sugar if desired.
  6. Bake for 35-40 minutes until golden brown on top but slightly wobbly inside. Let stand for 10 minutes before serving.
