  • 3 boneless skinless chicken breasts (about 1 ½ pounds)
  • 5 tablespoons unsalted butter
  • 1 medium shallot
  • 1 teaspoon garlic
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 16 ounces potato gnocchi
  • 2 cups fresh baby spinach
  • ½ cup Asiago cheese

Instructions

  1. Season pounded chicken breasts with salt and pepper. In a large skillet over medium heat, melt 2 tablespoons of butter. Cook the chicken for about 8-10 minutes until golden brown and cooked through. Transfer to a plate.
  2. In the same skillet, melt remaining butter and sauté shallots until softened (3-5 minutes). Add garlic and cook for an additional minute.
  3. Whisk in flour and cook for one minute before gradually adding chicken broth. Stir continuously until slightly thickened (3-5 minutes).
  4. Add half-and-half and uncooked gnocchi to the sauce; stir well and cook until gnocchi are tender (5-7 minutes).
  5. Stir in spinach and grated Asiago cheese until melted. Return chicken to the skillet, garnish with parsley, and serve.
