  • 12 large eggs
  • 2 ripe avocados
  • 3 tablespoons lime juice
  • 2 cloves garlic (minced)
  • 1/2 jalapeño (deseeded and minced)
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1/4 cup fresh cilantro (finely chopped)

Instructions

  1. Hard boil the eggs by covering them with water in a saucepan. Bring to a boil, then remove from heat and cover for 18 minutes. Transfer to an ice bath to cool.
  2. Once cool, cut each egg in half lengthwise and remove yolks into a food processor.
  3. Add avocados, lime juice, garlic, jalapeño, cayenne pepper, and salt to the processor. Blend until smooth, then fold in cilantro.
  4. Fill the egg whites with the avocado mixture using a spoon or piping bag. Garnish with extra cilantro or cayenne if desired.
