  • 1 large carrot (diced)
  • 1 stalk celery (diced)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon thyme (minced)
  • 2 cups butternut squash (diced)
  • 14 ounces great northern beans (drained and rinsed)
  • 10 ounces ground turkey (browned and crumbled)
  • 2 ½ cups chicken broth
  • ½ cup heavy cream
  • 2 cups fresh kale (chopped)

Instructions

  1. In a sauté pan over medium-high heat, brown the ground turkey until completely cooked. Drain excess oil and set aside.
  2. In a Dutch oven, heat olive oil over medium heat. Add diced carrots, onion, and celery; sauté for about 3-4 minutes.
  3. Stir in minced garlic and thyme; cook for an additional minute.
  4. Add diced butternut squash, rinsed beans, cooked turkey, and chicken broth. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes.
  5. Stir in heavy cream and chopped kale; simmer for another 4-5 minutes until kale is wilted.
  6. Serve hot with desired toppings.
