  • 1 (20 ounce) package refrigerated cheese tortellini
  • 3 tablespoons butter (divided)
  • 8 ounces cremini mushrooms (sliced)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1 tablespoon fresh sage (chopped)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil water in a large pot. Add cheese tortellini and cook according to package instructions until tender.
  2. While the tortellini cooks, chop fresh sage and slice cremini mushrooms.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add chopped sage and sauté until crispy (about one minute).
  4. Add sliced mushrooms, another tablespoon of butter, and minced garlic. Cook for about five minutes until browned.
  5. Drain the cooked tortellini and add it to the skillet with the mushroom mixture. Stir in the remaining butter and grated parmesan cheese. Season with salt and pepper to taste.
