  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)

  • 1/3 cup brown sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)
  • 1/4 cup cold unsalted butter, diced (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together 1 3/4 cups flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt.
  3. In another bowl, mix 1/2 cup milk, 1/3 cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just mixed. Fold in 1 cup of pitted cherries.
  5. For the topping, mix 1/2 cup flour, 1/3 cup brown sugar, and 1/2 teaspoon cinnamon in a small bowl. Blend in 1/4 cup cold diced butter until crumbly.
  6. Fill muffin cups two-thirds full with batter and sprinkle topping over each.
  7. Bake for 20–25 minutes or until a toothpick comes out clean.
