  • 1 large carrot, sliced
  • 1 medium potato, cubed
  • 1 cup spinach, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until soft.
  2. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in curry powder and turmeric; coat the aromatics well.
  4. Pour in coconut milk and vegetable broth, stirring to combine. Bring to a simmer.
  5. Add sliced carrot and cubed potato; simmer for 15 minutes until tender.
  6. In a bowl, mix flour, baking powder, salt, and water to form dumpling dough.
  7. Shape small dumplings from the dough and drop them into the simmering soup.
  8. Cover and cook for 10 minutes until dumplings float.
