  • 1 cup dry black, brown, or green lentils
  • 1 small red onion, finely diced
  • 6 cloves garlic, crushed
  • 2 tsp fennel seeds
  • 1 tbsp Italian seasoning
  • 1 tsp smoked paprika
  • 3 tbsp tomato paste
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups vegetable stock
  • ¾ cup heavy cream
  • 1 cup Parmesan cheese (or alternative)
  • Fresh basil, chopped

Instructions

  1. Cook lentils according to package instructions or use an Instant Pot for quick cooking.
  2. In a large sauté pan, heat oil from sundried tomatoes and sauté diced onion until soft. Add garlic and cook until fragrant.
  3. Stir in crushed fennel seeds, Italian seasoning, and smoked paprika; sauté briefly.
  4. Mix in tomato paste and sundried tomatoes; set aside.
  5. Once lentils are ready, rinse them and add to the pan mixture.
  6. Pour in vegetable stock and simmer for about 10 minutes.
  7. Stir in cream and cheese until melted; let rest for five minutes before serving.
