  • 1 small butternut squash, peeled and diced
  • 2 tbsp olive oil
  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tbsp plant-based butter
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese or nutritional yeast for vegan
  • ¼ cup plant-based cream (coconut cream or other alternative)
  • 2 cups baby spinach, roughly chopped

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender.
  2. In a large saucepan over medium heat, melt plant-based butter. Sauté minced garlic for one minute, then stir in orzo and toast lightly for about two minutes.
