  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • ½ cup parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained

Instructions

  1. In a large skillet over medium heat, melt the butter. Add chicken strips seasoned with salt and pepper; sauté until golden brown and cooked through (5–7 minutes).
  2. Add diced onion and garlic; cook until onions are translucent (3–4 minutes).
  3. Pour in chicken stock and add roasted red peppers along with Italian seasoning; simmer for 2 minutes.
  4. Reduce heat to low; stir in heavy cream (or coconut cream) and parmesan cheese until melted.
  5. Gently fold in pepperoncini peppers; heat through for another minute before serving.
