  • 2 tbsp olive oil
  • 1 yellow onion (diced)
  • 3 cloves garlic (minced)
  • 150 ml white grape juice (or water)
  • 250 ml cream
  • 125 g baby spinach
  • 280 g jar marinated artichokes (drained)
  • 4 tbsp basil pesto
  • 200 g gouda cheese (grated)

Instructions

  1. Sauté onion and garlic in olive oil over medium heat until soft.
  2. Add gnocchi; cook until lightly golden (3–5 minutes).
  3. Deglaze the pan with white grape juice or water, then add cream and simmer for 5 minutes.
  4. Stir in pesto, spinach, and artichokes; top with gouda cheese.
  5. Bake at 180°C (356°F) for 15–20 minutes until cheese is melted and golden.
  6. Serve warm directly from the skillet.
