Ingredients

  • Mascarpone cheese
  • Pumpkin puree
  • Heavy cream
  • Granulated sugar
  • Brown sugar
  • Ladyfingers
  • Coffee (espresso or strong coffee)
  • Pumpkin pie spice

  1. Brew espresso coffee and allow it to cool slightly.
  2. In a mixing bowl, combine mascarpone cheese, granulated sugar, brown sugar, kosher salt, and pumpkin pie spice. Mix until smooth.
  3. Add pumpkin puree and mix until fully incorporated.
  4. Whip cold heavy cream in another bowl until thickened and fold into the mascarpone mixture.
  5. Quickly dip each ladyfinger into the cooled coffee and layer them in a baking dish.
  6. Spread half of the mascarpone mixture over the first layer of ladyfingers.
  7. Repeat layering with remaining ladyfingers and filling.
  8. Chill in the refrigerator for at least 4 hours before serving.
