  • all-purpose flour
  • baking powder
  • ground cinnamon
  • salt
  • sugar
  • milk (or non-dairy alternative)
  • vegetable oil (or melted coconut oil)
  • vanilla extract
  • brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and sugar.
  3. In another bowl, mix the milk, oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; avoid overmixing.
  5. For the cinnamon swirl, combine brown sugar and additional cinnamon in a small bowl.
  6. Pour half of the batter into a prepared loaf pan. Sprinkle half of the cinnamon mixture on top. Add remaining batter and finish with the rest of the cinnamon swirl on top; use a knife to create a marbled effect.
  7. Bake for 50-60 minutes or until a toothpick comes out clean from the center.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
