  • 6 medium potatoes
  • 1 cup full-fat milk
  • 1 cup double cream
  • 1 tablespoon plain flour
  • 2 tablespoons butter
  • 1 cup Cheddar cheese
  • 2 tablespoons grated parmesan
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Peel and wash the potatoes; then slice them thinly.
  3. In a saucepan over medium heat, melt the butter and whisk in the flour until smooth.
  4. Gradually add milk while whisking to avoid lumps until the sauce thickens.
  5. Stir in Cheddar cheese, parmesan, minced garlic, Dijon mustard, nutmeg, salt, and pepper.
  6. Layer half of the sliced potatoes in a greased baking dish; pour half of the cheese sauce over them.
  7. Repeat with remaining potatoes and sauce.
  8. Cover with foil and bake for an hour; remove foil for the last 15 minutes at 220°C (410°F) for a golden crust.
  9. Let it cool slightly before serving.
