  • 1 pound large pasta shells
  • 2 cups ricotta cheese
  • 2 cups shredded provolone cheese
  • 2 cups frozen spinach, thawed and drained
  • 3 cups sliced shiitake or cremini mushrooms
  • 1 stick (8 tablespoons) salted butter
  • 2 teaspoons dried thyme
  • 2 chopped garlic cloves
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • Kosher salt and pepper to taste
  • 1/4 cup plain flour
  • 2 cups milk
  • 2 cups white grape juice or chicken broth
  • 1 cup shredded mozzarella
  • 3/4 cup grated parmesan

Instructions

  1. Melt butter in a skillet over medium heat. Sauté mushrooms with thyme, garlic, basil, oregano, salt, and pepper until golden.
  2. Sprinkle in flour; cook for a minute. Gradually whisk in milk and grape juice (or broth), stirring until thickened. Stir in mozzarella and parmesan until melted.
  3. Cook pasta shells according to package instructions until al dente; drain gently.
  4. Mix ricotta, provolone, and spinach in a bowl. Fill each pasta shell with the mixture.
  5. Spread half the sauce in a baking dish, arrange filled shells on top, pour remaining sauce over them, and sprinkle extra cheese if desired.
  6. Cover with foil and bake at 350°F for about 30 minutes; uncover for the last 10 minutes.
