  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 pound spaghetti
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 3 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Optional: Red pepper flakes for extra heat

Instructions

  1. Cook spaghetti according to package directions until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning. In a skillet, heat olive oil over medium-high heat and cook chicken until browned, about 6–8 minutes. Remove and set aside.
  3. In the same skillet, melt butter, add minced garlic, and sauté for about 1 minute. Whisk in flour and cook for another minute.
  4. Gradually add milk and chicken broth, whisking until smooth. Bring to a simmer.
  5. Stir in cream cheese and 1 cup of mozzarella until melted and smooth. Add in cooked chicken along with salt, pepper, and red pepper flakes if desired.
  6. Combine cooked spaghetti with the sauce until well coated. Top with remaining mozzarella cheese and cover for about 2–3 minutes until melted.
  7. Serve hot and garnish with fresh parsley or additional Parmesan.
