  • 1.25 cups granulated sugar

  • 1/2 cup lemon juice
  • 3/4 cup milk
  • 2.5 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp fresh lemon zest
  • 1/4 tsp salt
  • 2 tbsp poppy seeds

Instructions

  1. Preheat oven to 170°C (340°F) and line two springform pans with parchment paper.
  2. In a bowl, cream together butter and sugar until fluffy. Add eggs one at a time and mix well after each addition along with vanilla extract.
  3. Stir in oil, milk, and lemon juice until combined.
  4. Sift dry ingredients (flour, baking powder, baking soda, salt) over the wet mixture and gently fold until just combined. Add poppy seeds and lemon zest.
  5. Divide batter into prepared pans and bake for 25-27 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting.
