  • 2 tablespoons granulated sugar
  • sticks very cold unsalted butter
  • ¼ cup very cold water
  • lbs baking apples
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons unsalted butter (melted)
  • 1 egg (beaten)
  • 2 tablespoons turbinado sugar

Instructions

  1. Prepare the crust by combining flour, salt, and sugar in a food processor. Add cold butter and pulse until crumbly. Gradually add cold water until the mixture holds together. Chill the dough.
  2. For the filling, peel and slice apples thinly. Toss with sugar, vanilla extract, cinnamon, melted butter, and salt in a large bowl.
  3. Roll out the chilled dough into a circle on parchment paper. Transfer to a baking sheet.
  4. Layer apple slices over the dough in an overlapping pattern and fold edges over apples.
  5. Brush edges with beaten egg and sprinkle with turbinado sugar before chilling briefly.
  6. Preheat oven to 350°F (175°C) and bake for 55–65 minutes until golden brown.
