  • 1/2 cup salted butter, softened
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, blend softened butter, applesauce, eggs, sugar, and vanilla until smooth.
  3. Gradually add almond flour, oat flour, baking powder, and salt; stir until well combined.
  4. In another bowl, mix melted butter, oat flour, white sugar, and cinnamon for the filling.
  5. Prepare streusel topping by combining room temperature butter with brown sugar, almond flour, oat flour, and cinnamon.
  6. Grease an 8×8 baking dish. Pour half the batter into the dish; sprinkle with half the cinnamon filling and swirl gently. Repeat layers.
  7. Bake for 25 minutes; then add streusel topping and bake for another 18 minutes until golden brown.
  8. Let cool completely before slicing.
