  • 1 teaspoon fresh mint
  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup almond flour
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh mint, packed and chopped
  • 15 cherry tomatoes, halved
  • 2 cups English cucumber, diced
  • 1 cup kalamata olives
  • 1/2 cup red onion, diced
  • 2 tablespoons homemade Greek vinaigrette (or store-bought)
  • Cooked rice of your choice or lemon orzo pasta or pita bread or quick pickled onions

Instructions

  1. For the tzatziki sauce, combine mayonnaise, diced cucumber, lemon juice, minced garlic, salt, black pepper, dried dill, and fresh mint in a bowl; mix until well blended.
  2. In another bowl, mix ground chicken with egg and almond flour. Add salt, oregano, basil, dill, onion powder, garlic powder, black pepper, and fresh mint; mix gently until combined.
  3. Form the mixture into 1-inch meatballs and cook in a skillet over medium heat with olive oil until golden brown and cooked through (about 10-15 minutes).
  4. Serve meatballs drizzled with tzatziki sauce alongside cherry tomatoes, diced cucumbers, kalamata olives, red onion chunks, and your choice of side.
