Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar (plus extra for topping)
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the egg and vanilla extract; mix until well combined.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Gradually stir this mixture into the wet ingredients until a smooth dough forms.
  5. Roll small balls of dough (about 1 inch), shape into ovals, then use a fork to create a crosshatch pattern. Sprinkle lightly with sugar.
  6. Bake on a lined baking sheet for 8-10 minutes until lightly golden around the edges. Allow cookies to cool completely before adding the filling.
  7. For the filling, beat together additional creamy peanut butter with softened butter, powdered sugar, and vanilla extract until smooth; adjust texture with milk as needed.
  8. Spread or pipe filling onto one cookie and gently press another on top.
