  • 2 large sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 1 juicy apple, diced
  • 2 tablespoons butter
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet, and bake for 45-50 minutes until soft.
  2. In a skillet over medium heat, melt butter. Add diced apple, cranberries, nutmeg, cinnamon, and salt. Cook for 5-7 minutes until fruit is tender.
  3. Stir in maple syrup and cook for an additional 2 minutes before setting aside.
  4. Once cool enough to handle, slice baked sweet potatoes in half lengthwise and scoop out most of the flesh into a bowl. Mash with half of the filling mixture.
  5. Spoon the mashed mixture back into potato skins and top with remaining filling. Bake for another 10-12 minutes until heated through.
