Ingredients

Scale
  • 2 ribeye steaks (about 1 inch thick)
  • 4 tablespoons unsalted butter (divided)
  • 6 garlic cloves (2 smashed, 4 minced)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh herbs (rosemary or thyme)

Instructions

  1. Pat the steaks dry and season generously with salt and pepper.
  2. In a skillet over medium-high heat, melt 2 tablespoons butter and olive oil. Sear the steaks for 3-4 minutes on each side for medium-rare, adding smashed garlic and herbs for flavor.
  3. Remove the steaks and let them rest for 5-7 minutes.
  4. In the same skillet, lower heat to medium and melt remaining butter. Sauté minced garlic until fragrant, then stir in cream and simmer. Add Parmesan cheese, Dijon mustard, salt, and pepper; mix until smooth.
  5. Slice the steak against the grain, top with sauce, and serve immediately.
