  • 2 tablespoons extra-virgin olive oil

  • 2 stalks celery
  • 1 medium carrot
  • 4 cloves garlic
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh chopped thyme
  • 1 cup apple cider
  • 1/2 cup pure maple syrup
  • 2 cups beef stock

Instructions

  1. Season the short ribs generously with salt and pepper, then dust lightly with flour. Heat olive oil in a large pot over medium-high heat and brown the ribs on all sides. Remove from pot.
  2. In the same pot, sauté chopped onion, celery, carrot, and minced garlic until soft. Stir in tomato paste and thyme.
  3. Deglaze the pot with apple cider, scraping up any browned bits. Add back the ribs along with maple syrup and beef stock; bring to a simmer.
  4. Cover and braise on low heat for about 3 hours until the meat is fork-tender.
