  • 4 pieces bone-in, skin-on chicken thighs (or boneless)
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1/2 cup mixed olives (green and black)
  • 1 lemon, thinly sliced
  • 1/2 cup dry white grape juice (or extra broth)
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken thighs with salt, black pepper, and half the oregano. Allow to rest.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for about 5–7 minutes until golden; flip and cook for another 3–4 minutes. Remove from the pan.
  3. In the same pan, sauté onions for 2–3 minutes until translucent. Add garlic and cook for an additional 30 seconds.
  4. Deglaze the pan with grape juice or broth, then add remaining ingredients: chicken broth, oregano, artichokes, olives, and lemon slices. Nestle the chicken back in.
  5. Bring to a gentle simmer; cover and cook on medium-low for about 20 minutes or until chicken reaches an internal temperature of 165°F.
  6. Garnish with fresh parsley before serving.
