  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1½ cups old-fashioned oats
  • ⅔ cup chopped pecans

Instructions

  1. Preheat your oven to 350° F (176° C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ground ginger, allspice, cloves, nutmeg, and salt.
  3. In another bowl, mix melted butter and brown sugar until smooth. Add egg and vanilla extract; whisk until well combined.
  4. Carefully fold the dry ingredients into the wet mixture until just combined. Stir in oats and chopped pecans.
  5. Chill the dough in the refrigerator for about 15 minutes.
  6. Scoop dough onto prepared sheets (about 2 tablespoons each), spacing them evenly.
  7. Bake for 12-15 minutes until golden on the edges but soft in the center. Let cool before serving.
