  • 1 tbsp vegetable oil
  • 11 ounces turkey sausage (sliced)
  • 1 yellow onion (diced)
  • 2 carrots (peeled and cut into half-moons)
  • 1 garlic clove (minced)
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 5 cups chicken broth
  • ¼ head savoy cabbage (cored and chopped)
  • 3 tbsp cheese spread (at room temperature)
  • 12 cheese and potato pierogi
  • 3 tbsp chopped fresh dill
  • Freshly ground black pepper

Instructions

  1. Prepare all ingredients: slice turkey sausage, dice onion, peel and cut carrots, mince garlic, chop cabbage and dill.
  2. In a large pot, heat vegetable oil over medium heat. Add sliced turkey sausage and cook until browned (about 5 minutes). Remove and set aside.
  3. In the same pot, sauté minced garlic, diced onion, and carrot for about 3 minutes until softened. Stir in sweet paprika and ground cumin.
  4. Pour in chicken broth and bring to a boil; add chopped cabbage. Cover and simmer on medium-low for about 10 minutes.
  5. Stir in cheese spread until melted; then add pierogi. Boil until they float (fresh takes about 3-5 minutes).
  6. Turn off heat and stir in browned turkey sausage and freshly chopped dill. Season with black pepper to taste.
