  • 11 ounces sliced turkey sausage
  • 1 yellow onion, diced
  • 2 carrots, peeled and cut into half-moons
  • 1 garlic clove, minced
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 5 cups chicken broth
  • ¼ head savoy cabbage, cored and chopped
  • 3 tbsp cheese spread
  • 12 pierogi (cheese and potato filling)
  • 3 tbsp chopped fresh dill
  • Freshly ground black pepper

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add sliced turkey sausage and brown for about 5 minutes.
  2. Add diced onion, minced garlic, and carrots; sauté for 3 minutes until softened.
  3. Stir in sweet paprika and ground cumin before adding chicken broth; bring to a boil.
  4. Once boiling, add chopped savoy cabbage. Cover and simmer on low heat for 10 minutes until the cabbage wilts.
  5. Stir in cheese spread until combined, then gently add pierogi. Boil until they float (3-5 minutes if fresh; up to 8 minutes if frozen).
  6. Turn off heat; mix in browned turkey sausage and fresh dill. Season with black pepper before serving.
