  • 0.5 cup fresh or frozen chopped cranberries, thawed
  • 2 tablespoons sugar
  • 1 teaspoon orange zest
  • Dash salt
  • 6 ounces baguette-style French bread, cut diagonally into 16 slices
  • Cooking spray
  • 0.125 teaspoon ground pepper
  • 1 (6 ounce) log brie cheese, cut diagonally into 16 slices
  • 1 tablespoon finely chopped fresh basil

Instructions

  1. In a small bowl, combine pomegranate seeds, cranberries, sugar, orange zest, and a dash of salt. Chill this mixture to enhance flavors.
  2. Preheat the oven to 350°F (175°C). Arrange baguette slices on a baking pan, spray lightly with cooking spray, and sprinkle with ground pepper. Bake for about 8 minutes until golden brown.
  3. Top each toasted slice with a brie slice and return to the oven for an additional 4 minutes until cheese is softened.
  4. Stir in chopped basil into the chilled topping mixture and spoon it generously over each bruschetta before serving warm.
