  • 4 medium potatoes, peeled and diced
  • 1 pound turkey sausage or chicken sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup carrots, diced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons flour

Instructions

  1. In a large pot, cook the sausage over medium heat until browned (about 7-10 minutes). Remove and set aside.
  2. Add butter to the pot; sauté onions for 3-4 minutes until softened. Stir in garlic for another 30 seconds.
  3. Add carrots and celery; cook for an additional 3-4 minutes.
  4. Sprinkle flour over the veggies, stirring constantly for about 2 minutes.
  5. Gradually pour in chicken broth and add potatoes; stir well.
  6. Season with thyme, salt, black pepper, and paprika; bring to a boil then reduce heat to simmer for 20-25 minutes until potatoes are tender.
  7. Stir in cooked sausage along with heavy cream and whole milk; simmer for another 5 minutes before serving.
