  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1/2 cup (55g) unsalted butter, melted
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/2 cup (110ml) milk
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1/2 cup (60g) powdered sugar
  • 1/4 cup (85g) pure maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, prepare the streusel topping by combining melted butter, flour, light brown sugar, granulated sugar, and pumpkin pie spice.
  3. In a large bowl, whisk together the pumpkin puree, sugars, vegetable oil, eggs, vanilla extract, and milk until smooth.
  4. In another bowl, mix the flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into a greased loaf pan and sprinkle the streusel generously on top.
  7. Bake for 60-80 minutes or until a toothpick comes out clean.
  8. While cooling slightly on a wire rack, mix powdered sugar with maple syrup for the glaze and drizzle over the warm bread before serving.
