Pumpkin Oatmeal Scotchies are the perfect fall treat, combining warm spices and soft textures in every bite. These thick, chewy cookies blend the rich flavors of pumpkin with the sweetness of butterscotch chips, making them an irresistible addition to your autumn baking lineup.

  • 2 cups old-fashioned oats
  • 1 2/3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup butter (melted, cooled)
  • 1 cup sugar
  • 3/4 cup packed brown sugar
  • 1 egg yolk (at room temperature)
  • 2 tsp vanilla
  • 1 cup pumpkin puree (blotted with paper towels to remove most of the moisture)
  • 2 cups butterscotch chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, mix oats, flour, baking soda, cinnamon, and pumpkin pie spice.
  3. In another bowl, whisk melted butter, sugar, brown sugar, egg yolk, vanilla, and pumpkin puree until smooth.
  4. Combine wet and dry ingredients gently; fold in 1 1/2 cups of butterscotch chips.
  5. Drop tablespoonfuls of dough onto prepared baking sheets and flatten slightly.
  6. Top each cookie with additional butterscotch chips for extra flavor.
  7. Bake for 13-15 minutes until edges are golden and centers are set but soft.
  8. Allow cookies to cool on the baking sheet for about five minutes before transferring to wire racks.
