  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • Pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In one bowl, mix flour, pumpkin spice, and salt. In another, beat cream cheese and butter until creamy, then add sugars until fluffy. Mix in egg yolk and vanilla.
  3. Combine dry ingredients with the wet mixture gently.
  4. Scoop dough onto the prepared sheet and roll in coarse sugar before making an indentation for the filling.
  5. Whisk together egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla for the filling; pour into each cookie indentation.
