  • 1 ¼ tsp active dry yeast
  • 1 tsp honey
  • 1 ¼ c warm water
  • 2 ½ c bread flour
  • 2 tsp sea salt
  • ¼ c extra-virgin olive oil (divided)
  • 2 tbsp melted butter
  • 3 cloves garlic (minced)
  • Fresh rosemary (minced)

Instructions

  1. Activate the yeast by combining warm water, honey, and yeast in a bowl for 5-10 minutes until frothy.
  2. Mix bread flour and sea salt in a large bowl.
  3. Combine the yeast mixture with the dry ingredients and add ¼ cup olive oil to form a sticky dough.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  5. Let the dough rise in a greased bowl for about an hour or until doubled in size.
  6. While waiting, mix melted butter, minced garlic, rosemary, and remaining olive oil in a small bowl.
  7. Preheat the oven to 400°F (200°C). Punch down the dough and divide into 12 portions, placing each into a greased muffin tin.
  8. Drizzle with topping mixture and sprinkle finishing salt over each muffin before baking for about 20 minutes until golden brown.
  9. Let cool slightly before serving.
