  • 1 lb ground beef (80% lean)
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 2 cups beef broth
  • 2 tablespoons butter
  • 4 large russet potatoes, peeled and cubed
  • ½ cup milk (for mashed potatoes)
  • ¼ cup butter (for mashed potatoes)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, and pepper. Form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown on all sides (about 7-8 minutes). Remove and set aside.
  3. In the same skillet, melt butter and sauté sliced onions until golden. Stir in flour for 1 minute, then gradually whisk in beef broth. Simmer until thickened (5-7 minutes). Return meatballs to coat in gravy.
  4. Boil peeled and cubed potatoes until fork-tender (15-20 minutes). Drain and mash with butter, milk, salt, and pepper until smooth.
  5. Serve meatballs over mashed potatoes with gravy.
