Ingredients

  • 1/4 cup shredded coconut
  • 1/2 cup creamy almond butter
  • 3 tablespoons pure maple syrup
  • 2 large soft medjool dates (pitted)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup old-fashioned rolled oats
  • 1 scoop vanilla protein powder
  • 1/4 teaspoon kosher salt
  • 1 tablespoon chia seeds
  • 1 tablespoon mini chocolate chips
  • Flaky sea salt (for sprinkling on top)
  • 1/2 cup chocolate chips
  • 1/2 teaspoon coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C). Spread shredded coconut on a lined baking sheet and toast for about 5 minutes until lightly golden. Let cool.
  2. In a food processor, combine almond butter, maple syrup, pitted dates, vanilla extract, oats, protein powder, and salt. Process until smooth.
  3. Stir in toasted coconut and mini chocolate chips.
  4. Form the mixture into small balls (about one tablespoon each) and place on a baking sheet.
  5. Melt chocolate chips with coconut oil in intervals until smooth. Dip each ball in chocolate and return to the sheet.
  6. Refrigerate for about an hour until set. Enjoy!
