  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (drained)
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×4-inch loaf pan.
  2. In a large bowl, whisk together eggs, milk, olive oil, and yogurt until smooth.
  3. In another bowl, combine flour, baking powder, salt, and garlic powder.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in mozzarella cheese, sun-dried tomatoes, and basil.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 40–45 minutes until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool for about 10 minutes in the pan before transferring to a wire rack. Slice and serve warm or at room temperature.
