  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • ½ cup balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 ½ cups whole cranberries (fresh or frozen)
  • Fresh thyme sprigs

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Pat the beef roast dry and season generously with salt and pepper.
  3. In a Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, then remove it from the pot.
  4. Sauté chopped onions until softened, then add minced garlic and cook until fragrant.
  5. Deglaze the pot with balsamic vinegar, scraping up any browned bits.
  6. Stir in beef broth and brown sugar. Return the seared roast to the pot.
  7. Add whole cranberries and fresh thyme around the roast.
  8. Cover and transfer to the oven for about 3 to 3.5 hours or until fork-tender.
