  • 1 cup light brown sugar
  • ¼ cup white sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 tablespoon maple syrup
  • ¼ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 ½ teaspoons ground cinnamon
  • 2 cups all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup white sugar (for rolling)
  • ½ tablespoon pumpkin pie spice (for rolling)

Instructions

  1. In a saucepan over medium-low heat, melt the unsalted butter until golden brown and nutty. Let it cool.
  2. In a mixing bowl, whisk together the cooled brown butter with light brown sugar, granulated sugar, and maple syrup until smooth.
  3. Mix in the egg yolk, vanilla extract, and pumpkin puree until fully combined.
  4. In another bowl, whisk the flour, baking soda, baking powder, salt, pumpkin pie spice, and ground cinnamon together.
  5. Fold dry ingredients into the wet mixture until combined. Chill in the refrigerator for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop dough into balls and roll in a mixture of white sugar and pumpkin pie spice before placing on prepared sheets.
  8. Bake for 10-14 minutes until edges are set but centers remain slightly underbaked.
