  • 3 tbsp all-purpose flour
  • 12 oz evaporated milk
  • 8 oz shredded mozzarella cheese
  • 4 oz shredded Monterey Jack cheese
  • 2 oz shredded Parmesan cheese
  • 10 oz frozen chopped spinach (thawed)
  • 12 oz marinated artichoke hearts
  • 16 oz casarecce pasta

Instructions

  1. In a large cast iron pan, melt the butter over medium heat and stir in the flour to create a roux, cooking until lightly golden.
  2. Boil water in a separate pot, adding salt generously. Cook the pasta until just under al dente; reserve 1 cup of cooking liquid before draining.
  3. Gradually whisk evaporated milk into the roux until smooth, then add onion powder, garlic powder, minced garlic, salt, and pepper. Stir until thickened.
  4. Mix in most of the shredded cheese until melted, then fold in spinach and artichokes.
  5. Combine pasta into the sauce; add reserved cooking liquid if needed for consistency.
  6. Top with remaining cheese and broil for 4-6 minutes until bubbly and golden.
