  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 1 cup strawberries, chopped
  • ¼ cup granulated sugar (for topping)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat the oven to 375°F. In a bowl, mix sugar and cinnamon. Brush tortillas with melted butter and coat with the cinnamon-sugar mixture. Drape over the oven rack and bake for about 8–10 minutes until crisp. Let cool.
  2. Beat cream cheese, powdered sugar, and vanilla in a mixing bowl until smooth. Whip heavy cream until stiff peaks form; fold into the cream cheese mixture. Pipe this into the cooled tortillas.
  3. In a saucepan over medium heat, combine strawberries, sugar, and lemon juice until bubbly. Add cornstarch slurry to thicken the sauce. Cool completely before topping each taco with it.
