  • 500 g Gnocchi
  • 3 tbsp Truffle Butter
  • 1 1/2 tbsp Flour
  • 250 ml Milk
  • 70 g Cheddar (grated)
  • 30 g plus 1 tbsp Parmesan (grated)
  • Salt and Pepper
  • 30 g Breadcrumbs
  • 1 clove Garlic (crushed)
  • 1/2 tbsp Parsley (chopped)

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Cook the gnocchi according to package instructions until they float; drain and set aside.
  3. In a saucepan over medium heat, melt 2 tablespoons of truffle butter. Add flour and whisk for about two minutes.
  4. Gradually pour in the milk while whisking continuously until the sauce thickens.
  5. Stir in the cheddar cheese until melted, then season with salt and pepper.
  6. Fold in the cooked gnocchi until well coated in the cheese sauce.
  7. For the topping, blend remaining truffle butter, breadcrumbs, parmesan, garlic, and parsley in a food processor.
  8. Transfer the gnocchi mixture to a baking dish, sprinkle topping evenly, and bake for 10-15 minutes until golden brown.
